Sweet Potatoes Crust Quiche

This sweet potato quiche has a base of thinly sliced roasted sweet potatoes for the crust elegant enough for that special Sunday brunch.

Sweet Potatoes Crust Quiche
  1. To make the sweet potato crust
  2. Spray glass pie dish with cooking oil layer the slice sweet potatoes on bottom over lapping slightly stand up alongside of dish to make it look like pie crust.
  3. Now cook the sausage when the sausage is done add the bacon bits, red pepper, mushrooms and onions cook for one minute
  4. Put eggs and cream in a bowl and whip for one minute .
  5. On top of the sweet potato crust pour the sausage mixture.
  6. Next put the spinach
  7. Gently and slowly pour the eggs on top of the spinach sprinkle the feta cheese over the top
  8. Bake at 350 for 45-60 minutes until the middle is set
